my picky eater’s pick

I have had one of those days that didn’t go as planned.  Emergency chiropractor appointment- much better now.  Car follow-up.  Yep, three leaks that will need fixed.  Bread making and soup making (from scratch).  Tiring!  And a salad craving hubbie who I was content to go with to Panera for second dinner.  Yum salad.

Besides the salad, there was other good news.  In fact, the highlight of my past twenty-four hours was hearing my nephew- my super sweet, super cute, super picky sixteen month old nephew- LOVED my “Lots of Beans Chili” recipe!  My parents have been graciously trying some of my healthy recipes lately.  Yesterday, they made the chili while babysitting my nephew “L”- they all loved it!  My dad had two bowls and reluctantly passed on a third.  My mom enjoyed hers, and L had almost three bowls himself!  Baby bowls, of course, but it’s more food than the kid typically eats besides grilled cheese and bananas.

This was a busy day, so this is a quick blog.  And, it is in honor of my sister’s little one, L, who has my heart even more after loving my chili!  (Kid is gonna make bank come his birthday!)  Recipe’s below if you want to try it for any cold night coming up or Super Bowl party food.

Lots of Beans Slow Cooker Chili

Serves 8

 

Prep time: 10-15 min

Cook time: 6-8 hours

 

            1 (15 oz.) can black beans, drained and rinsed

            1 (15 oz.) can kidney beans, drained and rinsed

            1 (15 oz.) can garbanzo beans, drained and rinsed

            1 (16 oz.) can vegetarian baked beans

            1 (15 oz.) can diced fire roasted tomatoes in puree

            1 (15 oz.) can whole kernel corn, drained and rinsed

            1 yellow onion chopped

            1 bell pepper (green or red), chopped

            2 stalks celery, chopped

            2 cloves garlic, chopped

            1 T. chili powder

            1 t. each dried parsley, dried oregano, dried basil

 

Directions:

            Combine all ingredients in large slow cooker.  Stir well.  (Note: Don’t worry if there’s not a lot of liquid in the beginning.  It’ll turn out okay!).  Cook on high for three hours, then turn to low for remaining three-five hours.
